Enough chops to 2-3 per person

1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
6 cloves garlic, minced
4 teaspoons fresh thyme, chopped
1 1/2 teaspoons ground coriander

Grind salt, pepper, and coriander. Mix with garlic and thyme (I also like to add some Rosemary) to form a paste. Rub onto chops and place into a 400 degree oven set to convection roast. Roast for 5 minutes and turn until the internal temp reaches 130 degrees (10 - 15 minutes)
