2 lbs Ground Beef
Taco Seasoning (your favorite brand)
Zucchini (and yellow squash - optional)
Bell Peppers (red, orange, and yellow)
Broccoli stems (shredded)
2 Jars Salsa (your favorite brand)
Cheese (Mexican Blend or Cheddar)

Cut zucchini and bell peppers into bite size pieces. Brown ground beef and make taco meat according to your package directions. Add Broccoli stems, bell pepper and zucchini and saute until slightly tender (but not soft.) Stir in salsa. Dish into oven safe containers and cover with cheese.

At this point you can freeze for later or bake at 350 until cheese is melted and brown.
