1 cup butter
2 cups sifted all-purpose four or gluten free alternative
1/2 cup brown sugar, packed
2 egg whites, unbeaten
2 egg yolks, unbeaten
1-1/4 cups finely chopped nuts (Half Pecans and Half Walnuts)
1/2 tsp vanilla extract
jam, jelly, strawberry preserves
1/4 tsp salt (omit if use salted butter)

Start heating oven to 350F. Cream butter until light and fluffy, gradually adding brown sugar. Add egg yolks, mix well. Blend in vanilla, salt, flour. Shape dough into 1-inch balls (or measure out 1/2 0z of dough and roll into ball), dip each in egg white, then nuts. Place on ungreased cookie sheet, about 1" apart. Bake 5 minutes, then with thimble or end or wooden spoon, quickly make depression in each. Bake 8 minutes longer. Cook, fill depression with jam.
Makes 3 1/2 dozen
